15-Minute Mediterranean Pasta

Ingredients
  

Pasta Base

  • 12 oz pasta penne, fusilli, or spaghetti
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives sliced
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • 1 lemon zested and juiced
  • 0.75 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • salt and black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve some pasta water and drain.
  • Heat olive oil in a skillet over medium heat. Add garlic and sauté briefly until fragrant.
  • Add tomatoes and olives. Cook 2–3 minutes until slightly softened.
  • Stir in oregano, red pepper flakes, lemon zest, and lemon juice.
  • Add cooked pasta to the skillet and toss to coat. Add pasta water if needed.
  • Remove from heat. Fold in feta and parsley.
  • Season with salt and pepper. Serve immediately.

Notes

Great with grilled chicken, shrimp, or chickpeas for added protein.
