Ingredients
  

  • 2 fillets white fish cod or halibut
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 0.25 cup olives sliced
  • 1 tbsp capers optional
  • 1 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • salt and pepper to taste

Instructions
 

  • Season fish with salt and pepper.
  • Heat olive oil in skillet and sear fish until golden, then remove.
  • Sauté garlic, tomatoes, olives, and capers.
  • Return fish to pan and finish with lemon juice and zest.

Notes

Serve immediately with fresh herbs and crusty bread.
