Ingredients
  

Rice Base

  • 1.5 cups sushi rice
  • 2 cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt

Salmon Topping

  • 12 oz salmon fillet skin removed, diced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp sriracha adjust to taste

Creamy Sauce

  • 0.5 cup mayonnaise
  • 4 oz cream cheese softened

Instructions
 

  • Cook sushi rice and season with vinegar, sugar, and salt. Let cool slightly.
  • Preheat oven to 375°F (190°C) and line a baking sheet or mini muffin tin.
  • Mix diced salmon with soy sauce, sesame oil, and sriracha.
  • Combine mayonnaise and cream cheese until smooth.
  • Press rice into bite-sized portions on baking sheet or tin.
  • Top rice with salmon and creamy mixture.
  • Bake for 12–15 minutes until salmon is cooked and tops are lightly golden.
  • Garnish and serve warm.

Notes

Serve with nori squares, soy sauce, or extra spicy mayo for dipping.
