Ingredients
  

Salad

  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 0.5 red onion sliced
  • 0.25 cup fresh parsley chopped
  • 1 tsp honey

Instructions
 

  • Preheat oven to 400°F and line baking sheet.
  • Toss potatoes with oil, salt, and pepper.
  • Roast 25–30 minutes until golden.
  • Whisk balsamic dressing ingredients.
  • Combine warm potatoes with onion and parsley.
  • Pour dressing over and toss.
  • Adjust seasoning and serve.

Notes

Best served warm but can also be chilled.
