Ingredients
  

Pie Filling

  • 2 cups mashed sweet potatoes
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 0.25 cup heavy cream
  • 2 tbsp bourbon
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C). Prepare pie crust in a 9-inch pie dish.
  • In a large bowl, mix mashed sweet potatoes with sugars until smooth.
  • Add butter, eggs, cream, bourbon, and vanilla. Mix until combined.
  • Stir in spices and salt gently.
  • Pour filling into crust and smooth the top.
  • Bake 50–60 minutes until set. Cool completely before slicing.

Notes

For best flavor, use roasted sweet potatoes and allow pie to cool fully before serving.
