Ingredients
  

Potatoes

  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Boil potatoes in salted water until fork-tender, then drain.
  • Heat butter and olive oil in a skillet over medium heat.
  • Add garlic and sauté until fragrant, about 30 seconds.
  • Pour in cream and milk, season, and simmer gently.
  • Add potatoes and toss gently to coat in sauce.
  • Garnish with parsley and serve warm.

Notes

For extra richness, add grated parmesan before serving.
