Ingredients
  

Pork Tenderloin

  • 2 lbs pork tenderloin
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika optional

Dijon Cream Sauce

  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 shallot finely chopped
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • to taste salt and pepper

Garnish

  • for garnish fresh thyme sprigs
  • optional lemon wedges

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet or grease an oven-safe skillet.
  • Pat pork tenderloin dry. Rub with olive oil, salt, pepper, and smoked paprika.
  • Sear pork on all sides in a hot skillet for 2–3 minutes until golden brown.
  • Roast in oven for 15–20 minutes until internal temperature reaches 145°F (63°C). Rest 5–10 minutes.
  • In same skillet, melt butter over medium heat. Sauté garlic and shallot for 1–2 minutes.
  • Add chicken broth, scraping the pan. Simmer 2–3 minutes.
  • Stir in heavy cream, Dijon mustard, and thyme. Simmer 3–4 minutes until thickened. Season with salt and pepper.
  • Slice pork tenderloin, drizzle with Dijon sauce, garnish with thyme and lemon wedges.
