Ingredients
  

Pastry

  • 2 sheets puff pastry thawed
  • 4 oz goat cheese softened
  • 1 cup fresh blackberries
  • 2 tbsp granulated sugar
  • 1 tsp lemon zest
  • 0.5 tsp vanilla extract
  • 1 egg for egg wash

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Mash blackberries with sugar, lemon zest, and vanilla until juicy but textured.
  • Roll puff pastry on a floured surface and cut into rectangles.
  • Spread goat cheese on half of each pastry piece and top with blackberry mixture.
  • Fold pastry over filling, cut into strips, and twist gently.
  • Place twists on baking sheet and brush with egg wash.
  • Bake 16–18 minutes until puffed and golden brown.
  • Cool slightly on a wire rack before serving.

Notes

Serve warm or at room temperature. Optional powdered sugar or honey drizzle before serving.
