Ingredients
  

  • 12 oz pasta fettuccine or spaghetti
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 yellow onions thinly sliced
  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 0.25 cup Parmesan cheese grated

Instructions
 

  • Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
  • Heat olive oil and butter in a skillet over medium-low heat. Add onions and cook 25–30 minutes until caramelized.
  • Add mushrooms and cook until golden and tender.
  • Stir in garlic and cook until fragrant.
  • Add pasta and reserved water, tossing until a silky sauce forms.
  • Season with salt and pepper. Finish with Parmesan and serve.

Cook onions slowly for best flavor.
