Ingredients
  

Meatloaf

  • 1.5 lbs ground beef 80/20
  • 2 yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup shredded cheese Gruyère or mozzarella
  • 0.75 cup breadcrumbs
  • 2 eggs large
  • 0.5 cup beef broth

Instructions
 

  • Caramelize onions slowly in butter and olive oil until golden.
  • Mix ground beef, breadcrumbs, eggs, broth, and seasonings.
  • Fold in caramelized onions.
  • Stuff meat mixture with cheese and shape into loaf.
  • Bake at 375°F for 50–60 minutes.
  • Rest before slicing and serving.

Notes

Let meatloaf rest 10 minutes before slicing for best texture.
