Ingredients
  

Pastry

  • 2 sheets puff pastry thawed if frozen
  • 1 egg beaten for egg wash
  • 1 tbsp water for egg wash
  • salt and pepper to taste

Filling

  • 6 large eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 lb breakfast sausage cooked and crumbled
  • 1/4 cup bell pepper diced, optional
  • 1/4 cup onion finely chopped, optional
  • 1 tbsp butter or oil for cooking eggs
  • fresh herbs optional

Instructions
 

  • Cook and crumble breakfast sausage; sauté veggies if using.
  • Whisk eggs with milk, salt, and pepper; scramble in a skillet.
  • Preheat oven to 400°F (200°C); line baking sheet.
  • Cut puff pastry into rectangles and fill with eggs, sausage, and cheese.
  • Seal edges with egg wash and make steam slits.
  • Bake 18–22 minutes until golden brown.
  • Cool slightly and serve warm.
