Ingredients
  

Strata

  • 2 cups sweet potatoes thinly sliced
  • 6 eggs large
  • 1 cup milk
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup onion diced
  • 2 cloves garlic minced

Sauce

  • 2 tbsp butter
  • 0.5 cup cream
  • 0.5 cup cheese shredded

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • Roast sweet potato slices until just tender.
  • Whisk eggs, milk, salt, and pepper in a bowl.
  • Layer sweet potatoes, onions, garlic, and cheese in the dish.
  • Pour egg mixture over layers and bake until set.
  • Prepare sauce by melting butter and stirring in cream and cheese.
  • Serve strata warm with sauce drizzled on top.
