Ingredients
  

Cookie Dough

  • 2 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp fine sea salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.33 cup honey
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup pistachios chopped
  • flaky sea salt for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Whisk together flour, baking soda, baking powder, and salt in a bowl.
  • Cream butter and brown sugar until light and fluffy.
  • Mix in honey, egg, and vanilla until smooth.
  • Add dry ingredients and mix just until combined.
  • Fold in chopped pistachios.
  • Scoop dough onto baking sheets and bake 11–13 minutes.
  • Sprinkle with flaky sea salt and cool on wire rack.

Notes

Do not overbake; cookies firm up as they cool.
