Ingredients
  

Chicken Mixture

  • 1 lb ground chicken
  • 1 zucchini grated and squeezed dry
  • 1 egg large
  • 0.5 cup breadcrumbs or almond flour
  • 0.5 cup shredded mozzarella
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate zucchini and squeeze out all excess moisture using a kitchen towel.
  • In a large bowl, combine ground chicken, zucchini, egg, cheese, breadcrumbs, and seasonings.
  • Mix gently until just combined.
  • Roll mixture into small balls and place on prepared baking sheet.
  • Brush lightly with oil and bake 18–22 minutes, flipping halfway.
  • Broil for 2 minutes for extra color if desired.
  • Serve warm with dipping sauce.
