Ingredients
  

Muffins

  • 4 cups day-old brioche bread cubed
  • 4 eggs large
  • 1 cup whole milk
  • 0.25 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Cinnamon Sugar Coating

  • 0.5 cup unsalted butter melted
  • 0.5 cup granulated sugar
  • 1.5 tsp cinnamon

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a muffin tin.
  • Divide bread cubes evenly among muffin cups.
  • Whisk eggs, milk, sugars, cinnamon, nutmeg, vanilla, and salt in a bowl.
  • Pour custard mixture evenly over bread, pressing gently to soak.
  • Bake for 22–25 minutes until puffed and golden.
  • Cool slightly, then remove muffins from pan.
  • Brush muffins with melted butter.
  • Roll warm muffins in cinnamon sugar and serve.

Notes

Best served warm. Reheat gently and recoat with cinnamon sugar if needed.
