Ingredients
  

  • 1.5 cups Arborio rice
  • 2 cups butternut squash diced
  • 4 cups vegetable broth warm
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 onion chopped
  • 2 cloves garlic minced

Instructions
 

  • Roast butternut squash until tender and lightly caramelized.
  • Sauté onion and garlic in butter and olive oil.
  • Add rice and toast briefly.
  • Gradually add warm broth, stirring until creamy.
  • Fold in squash and Parmesan, season and serve.
