Ingredients
  

Main Dish

  • 4 fillets cod skinless
  • 1 cup coconut milk full-fat
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika

Instructions
 

  • Season cod fillets with salt, pepper, and paprika.
  • Heat olive oil in a skillet and sear cod until just cooked. Remove and set aside.
  • Add garlic to the skillet and sauté briefly.
  • Pour in coconut milk, lemon juice, and zest. Simmer gently.
  • Return cod to skillet and spoon sauce over fish.
  • Simmer 2–3 minutes, garnish, and serve.

Notes

Serve with rice or vegetables for a complete meal.
