Ingredients
  

Soup Base

  • 1.5 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 28 oz crushed tomatoes
  • 4 cups chicken broth
  • 0.5 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1.5 cups mozzarella cheese shredded

Instructions
 

  • Add onion, garlic, chicken, tomatoes, broth, and seasonings to crockpot.
  • Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Remove chicken, shred, and return to crockpot.
  • Stir in cream, Parmesan, and mozzarella until melted.
  • Adjust seasoning and serve hot.

Add pasta or vegetables if desired.
