Ingredients
  

  • 20 cloves garlic peeled
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 4 cups chicken stock
  • 0.5 cup heavy cream
  • 2 egg yolks
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground

Instructions
 

  • Cook onion in butter and olive oil until soft.
  • Add garlic and cook gently.
  • Add stock and simmer until garlic is tender.
  • Blend until smooth.
  • Temper egg yolks with cream and soup.
  • Stir back into pot and heat gently.

Notes

Do not boil after adding egg yolks.
