  • 4 boneless skinless chicken breasts
  • 2 zucchini sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup heavy cream
  • 0.25 cup chicken broth
  • 1 lemon juiced and zested

Instructions
 

  • Season chicken with salt and pepper.
  • Sear chicken in butter and olive oil until golden; remove from skillet.
  • Sauté zucchini until just tender; remove and set aside.
  • Add garlic, broth, cream, lemon juice, and zest to skillet.
  • Return chicken and zucchini; simmer until cooked through.
