Ingredients
  

Crepe Batter

  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.5 cups milk
  • 2 tbsp butter melted
  • 2 tbsp sugar
  • 1 tsp vanilla extract

Mango Cream Filling

  • 1 cup fresh mango pureed
  • 0.75 cup heavy cream
  • 4 oz cream cheese softened
  • 0.5 cup powdered sugar

Instructions
 

  • Whisk together flour, sugar, eggs, milk, butter, and vanilla until smooth.
  • Let batter rest for 20 minutes.
  • Cook thin crepes in a nonstick pan until lightly golden.
  • Whip cream and blend mango with cream cheese and sugar.
  • Fold whipped cream into mango mixture.
  • Fill crepes and fold into pillow shapes.

Notes

Use ripe mangoes for best flavor and smooth texture.
