Ingredients

  • 1.5 lbs chicken thighs or breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1.5 cups orzo pasta dry
  • 3 cups chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 cup baby spinach optional

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken, season, and sear until golden. Remove and set aside.
  • Sauté onion and garlic in the same pan until fragrant.
  • Stir in orzo and toast briefly.
  • Add broth and chicken. Cover and simmer.
  • Stir in cream and Parmesan.
  • Add spinach and cook until creamy.

Notes

Add extra broth if needed when reheating.
