Ingredients
  

Dip Base

  • 1 head garlic roasted
  • 1 tbsp olive oil
  • 6 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp sour cream
  • 1.5 tbsp lemon juice fresh
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh thyme chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil.
  • Roast for 35–40 minutes until garlic is soft and golden. Let cool slightly.
  • Squeeze roasted garlic into a mixing bowl or food processor.
  • Add goat cheese, cream cheese, sour cream, lemon juice, salt, pepper, and thyme.
  • Blend until smooth and creamy.
  • Taste and adjust seasoning if needed.
  • Transfer to a serving bowl, drizzle with olive oil, garnish, and serve.

Notes

Serve warm or chilled. Add honey or chili flakes for flavor variation.
