Ingredients
  

  • 3 cups roasted red peppers
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1.5 cups Gouda cheese shredded
  • 1 tsp smoked paprika
  • to taste salt and black pepper

Instructions
 

  • Heat olive oil in a pot and sauté onion until soft. Add garlic and cook briefly.
  • Add roasted red peppers, broth, paprika, salt, and pepper. Simmer 15 minutes.
  • Blend soup until completely smooth.
  • Stir in cream and shredded Gouda over low heat until melted.
  • Adjust seasoning and serve warm.

Notes

Add cheese gradually over low heat for best texture.
