Ingredients
  

Salmon

  • 4 fillets salmon about 6 oz each
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 small onion or shallot diced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 0.5 lemon juiced

Instructions
 

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • Pat salmon dry and season with salt, pepper, and paprika.
  • In a skillet, heat olive oil and sauté onion until soft. Add garlic and cook briefly.
  • Add spinach and cook until wilted.
  • Stir in cream, broth, Parmesan, and Italian seasoning. Simmer until slightly thickened.
  • Add lemon juice and adjust seasoning.
  • Spread sauce in baking dish and place salmon on top.
  • Bake 18–22 minutes until salmon is cooked through and flakes easily.

Notes

Serve with rice, potatoes, or vegetables. Do not overcook the salmon.
