Ingredients
  

Pasta

  • 12 oz pasta penne or rigatoni

Sauce

  • 2 cups sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 0.75 cup cream or plant-based
  • 0.5 cup vegetable broth
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • Cook pasta in salted water until al dente. Reserve pasta water and drain.
  • Boil or roast sweet potatoes until tender.
  • Sauté onion and garlic in olive oil until soft.
  • Blend sweet potatoes, onion, garlic, cream, broth, and seasoning until smooth.
  • Simmer sauce gently, then toss with pasta.
  • Adjust consistency with pasta water and serve warm.

Adjust seasoning to taste and add herbs for extra flavor.
