Ingredients
  

Pineapple Rings

  • 1 fresh pineapple peeled and sliced into rings
  • 1 cup all-purpose flour
  • 2 eggs large
  • 0.25 cup milk or coconut milk
  • 1.5 cups sweetened shredded coconut
  • 0.5 cup panko breadcrumbs
  • 0.25 cup granulated sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp salt

Instructions
 

  • Prepare pineapple rings and pat dry.
  • Set up flour, egg mixture, and coconut coating bowls.
  • Dip rings in flour, egg, then coconut mixture.
  • Fry, air fry, or bake until golden and crisp.
  • Drain on rack and serve warm.
