  • 2 pounds baby or Yukon gold potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp fresh rosemary finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp smoked paprika
  • 0.5 tsp sea salt adjust to taste
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Halve potatoes and pat dry with a kitchen towel.
  • In a large bowl, combine olive oil, garlic, rosemary, thyme, paprika, salt, and pepper.
  • Toss potatoes in the oil and herb mixture until fully coated.
  • Spread potatoes in a single layer on the baking sheet.
  • Roast for 25–30 minutes, flipping halfway, until golden and crispy.
  • Remove from oven, garnish with parsley, and serve immediately.

Notes

For extra crispiness, use a convection oven or increase temperature to 450°F (230°C).
