Ingredients
  

Taco Filling

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.75 cup salsa thick

Assembly

  • 12 corn tortillas
  • 1.5 cups shredded cheese cheddar or Mexican blend

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  • Heat oil in a skillet and sauté onion and garlic until soft.
  • Add ground beef and cook until browned.
  • Stir in seasoning, spices, and salsa. Simmer until thick.
  • Fill tortillas with beef and cheese, fold and place on baking sheet.
  • Bake 10 minutes, flip, and bake another 8–10 minutes until crispy.
  • Garnish and serve hot.

Notes

For extra crunch, brush tortillas lightly with oil before baking.
