Ingredients
  

Enchiladas

  • 12 corn tortillas
  • 2 cups shredded cooked chicken
  • 2.5 cups red enchilada sauce
  • 1.5 cups Monterey Jack cheese shredded
  • 1 cup cheddar cheese shredded
  • 0.5 cup white onion diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp salt

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  • Sauté onion and garlic in olive oil until soft. Stir in chicken and spices.
  • Warm and lightly crisp tortillas in oven for 5 minutes.
  • Spread sauce in baking dish. Fill tortillas with chicken and cheese and roll.
  • Place seam-side down, cover with remaining sauce and cheese.
  • Bake uncovered 18–20 minutes until bubbly and crisp.

Notes

Add crema, avocado, or jalapeños for extra flavor.
