Ingredients
  

Enchiladas

  • 12 corn tortillas
  • 2 cups shredded cooked chicken
  • 2 cups red enchilada sauce
  • 1.5 cups shredded Monterey Jack cheese
  • 0.5 cup cheddar cheese

Instructions
 

  • Preheat oven to 400°F (200°C). Grease baking dish.
  • Sauté onion and garlic in oil with spices.
  • Mix with chicken and cheese.
  • Fill tortillas, roll, and place in dish.
  • Top with sauce and cheese.
  • Bake uncovered 20–25 minutes until bubbly and crisp.

Notes

Use corn tortillas for best crisp texture.
