  • 1.5 lbs baby potatoes halved
  • 1 block feta cheese full-fat
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.75 tsp salt
  • 1 lemon zest and juice

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
  • Toss potatoes with olive oil, garlic, paprika, salt, and pepper.
  • Arrange potatoes cut-side down and place feta in the center.
  • Roast for 35–45 minutes, flipping potatoes halfway through.
  • Crack feta gently, finish with lemon zest and juice, and serve hot.
