Ingredients
  

Chicken & Broth

  • 2 lbs chicken breasts boneless, skinless
  • 6 cups chicken broth low sodium preferred

Vegetables

  • 3 medium carrots peeled and sliced
  • 3 stalks celery sliced
  • 1 medium onion diced
  • 3 cloves garlic minced

Flavorings

  • 2 lemons juice and zest
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper

Optional Garnishes

  • fresh parsley or dill chopped
  • lemon wedges for serving

Instructions
 

  • Prepare the vegetables: slice carrots, celery, onion, and mince garlic. Place in the Crockpot.
  • Place chicken breasts on top of vegetables.
  • Season with thyme, oregano, salt, and pepper.
  • Pour chicken broth over all ingredients.
  • Cook on low for 6–7 hours or high for 3–4 hours.
  • Remove chicken, shred, and return to the Crockpot.
  • Add lemon juice and zest. Stir and taste for seasoning.
  • Serve hot, garnished with fresh parsley or dill and optional lemon wedges.

Notes

For added depth, add a bay leaf while cooking and remove before serving.
