Ingredients
  

Slaw Base

  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 cup carrots julienned
  • 1 red bell pepper thinly sliced
  • 3 scallions sliced
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup almonds or peanuts sliced
  • 2 tbsp sesame seeds

Ginger Dressing

  • 0.25 cup rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil toasted
  • 1 tbsp fresh ginger grated
  • 1 garlic clove minced
  • 0.25 cup avocado oil

Instructions
 

  • Shred all vegetables and place in a large bowl.
  • Whisk all dressing ingredients until smooth.
  • Pour dressing over slaw and toss well.
  • Add nuts and seeds. Toss gently again.
  • Let rest 5 minutes before serving.

Notes

For best texture, add nuts just before serving.
