Ingredients
  

Crust

  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp honey
  • 0.25 tsp salt

Filling

  • 16 oz cream cheese softened
  • 0.75 cup honey
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup sour cream

Topping

  • 1.5 cups fresh figs sliced
  • 0.25 cup honey
  • 1 tbsp lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper.
  • Mix graham crumbs, melted butter, honey, and salt. Press into pan and bake 10 minutes.
  • Beat cream cheese until smooth. Add honey and mix well.
  • Add eggs one at a time, then vanilla and sour cream.
  • Pour filling over crust and spread evenly.
  • Simmer figs, honey, and lemon juice until thick. Spoon over cheesecake.
  • Bake 30–35 minutes until center is set. Cool completely.
  • Chill at least 3 hours before slicing into bars.

Notes

Use fresh figs for best flavor. Bars taste even better the next day after chilling overnight.
