Easy Christmas Jello Balls (No Bake!)

Ingredients
  

Jello Balls

  • 2 packages flavored gelatin 3 oz each, e.g., strawberry and lime
  • 1 cup boiling water per package
  • 0.5 cup cold water per package

Filling

  • 1 cup whipped cream or cream cheese frosting
  • 0.25 cup powdered sugar optional

Coating

  • 1 cup shredded coconut divided
  • food coloring optional

Instructions
 

  • Dissolve each gelatin package in 1 cup boiling water. Stir until fully dissolved, then add 1/2 cup cold water. Pour into separate shallow containers and refrigerate until firm.
  • Using a melon baller or spoon, scoop jello into bite-sized balls.
  • Divide shredded coconut between two bowls. Tint half with green food coloring if desired.
  • Roll jello balls in coconut, place on parchment-lined tray, and chill for 30 minutes.
  • Beat whipped cream (or cream cheese frosting) with powdered sugar until smooth and fluffy. Transfer to piping bag.
  • Make a small indentation in each jello ball and pipe in filling. Press gently to seal.
  • Chill filled balls in fridge for 30–60 minutes before serving.

Notes

Jello balls can be made a day in advance and stored in an airtight container in the fridge.
