Ingredients
  

Tart Base

  • 1 sheet puff pastry thawed
  • 8 oz brie cheese sliced
  • 2 pears thinly sliced
  • 1 cup cranberries fresh or frozen
  • 3 tbsp honey
  • 1 tsp fresh thyme optional
  • 1 egg beaten for egg wash

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out puff pastry slightly and place on prepared sheet. Score a 1-inch border.
  • Prick the center with a fork to prevent puffing.
  • Arrange brie slices inside the border.
  • Layer pears and cranberries over the brie.
  • Drizzle with honey and sprinkle with herbs if using.
  • Brush border with egg wash.
  • Bake for 20–25 minutes until golden and puffed.

Notes

Serve warm for best texture and flavor. Can be made ahead and reheated.
