Ingredients
  

Taco Filling

  • 3 lbs beef chuck roast
  • 1 onion sliced
  • 4 cloves garlic minced
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup beef broth
  • 2 tbsp lime juice
  • 2 tbsp apple cider vinegar

Instructions
 

  • Add sliced onions to the bottom of the slow cooker.
  • Place beef on top and rub with spices.
  • Add garlic, broth, lime juice, and vinegar.
  • Cover and cook on LOW for 8 hours.
  • Remove beef and shred with forks.
  • Return beef to slow cooker and mix with juices.
  • Warm tortillas and assemble tacos.

Notes

Serve with cilantro, onion, and lime for authentic flavor.
