Ingredients

  • 2 lbs bone-in chicken thighs
  • 2 lbs Yukon Gold potatoes cut into wedges
  • 0.33 cup olive oil
  • 0.25 cup fresh lemon juice
  • 4 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup chicken broth

Instructions
 

  • Preheat oven to 400°F (205°C). Lightly grease a large baking sheet.
  • Toss potatoes with olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  • Spread potatoes evenly on the baking sheet.
  • Season chicken with olive oil, salt, pepper, and oregano.
  • Place chicken among potatoes and pour broth around the pan.
  • Roast uncovered for 45–55 minutes, turning potatoes halfway through.
  • Optional: Broil for 3–5 minutes to crisp skin.
  • Rest 5 minutes, garnish, and serve.

Notes

Use fresh lemon juice for best flavor. Add vegetables if desired.
