Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted

Filling

  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 2 tsp lemon juice

Frosting

  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1-2 tsp milk or cream
  • as needed green food coloring
  • optional red candies for garnish

Instructions
 

  • Preheat oven to 325°F (165°C). Line a muffin pan with cupcake liners.
  • Mix graham cracker crumbs, sugar, and melted butter. Press into liners and bake 5–7 minutes. Cool.
  • Beat cream cheese until smooth. Add sugar, eggs, vanilla, and lemon juice. Mix until creamy.
  • Spoon filling onto cooled crusts. Smooth tops and tap pan to release air bubbles.
  • Bake 18–20 minutes until centers are set but slightly jiggly. Cool 15 minutes, then refrigerate 2 hours.
  • Beat butter for frosting. Gradually add powdered sugar and milk until smooth. Mix in green food coloring.
  • Pipe or spread frosting on chilled cheesecakes. Garnish with red candy if desired.
  • Serve chilled. Store leftovers in airtight container up to 5 days.

Notes

Use room temperature ingredients for smooth filling. Avoid overmixing to prevent cracks.
