Ingredients
  

Salad

  • 12 oz short pasta rotini or fusilli
  • 1 cup feta cheese crumbled
  • 0.75 cup dried cranberries
  • 0.25 cup red onion finely diced
  • 0.25 cup fresh parsley chopped

Dressing

  • 0.33 cup olive oil extra virgin
  • 3 tbsp lemon juice fresh
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground

Instructions
 

  • Cook pasta in salted boiling water until al dente. Drain and cool completely.
  • Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until combined.
  • In a large bowl, combine pasta, cranberries, red onion, and parsley.
  • Gently fold in feta cheese.
  • Pour dressing over salad and toss to coat evenly.
  • Chill for 20–30 minutes before serving for best flavor.

Notes

Add grilled chicken or chickpeas for a complete meal.
