Ingredients
  

Salad

  • 12 oz rigatoni pasta
  • 1 cup feta cheese crumbled
  • 0.75 cup dried cranberries

Dressing

  • 0.33 cup olive oil extra virgin
  • 2 tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • 1 clove garlic minced
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper to taste

Instructions
 

  • Cook rigatoni in salted boiling water until al dente. Drain and cool.
  • Whisk olive oil, lemon juice, Dijon, honey, garlic, salt, and pepper until emulsified.
  • Combine pasta, feta, and cranberries in a large bowl.
  • Pour dressing over salad and toss gently to coat.
  • Chill for 30 minutes before serving for best flavor.

Add fresh herbs or nuts for extra texture and flavor.
