Ingredients
  

Cheese Straw Dough

  • 2 cups all-purpose flour
  • 0.75 cup unsalted butter cold, cubed
  • 1 cup Parmesan cheese freshly grated
  • 1 tbsp fresh rosemary finely chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4-6 tbsp ice water

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Whisk flour, salt, and black pepper in a large bowl.
  • Cut cold butter into flour until coarse crumbs form.
  • Mix in Parmesan cheese and rosemary.
  • Add ice water gradually until dough just comes together.
  • Roll dough to ¼-inch thickness and cut into strips.
  • Twist strips and place on baking sheet.
  • Bake 15–18 minutes until golden and crisp.

Notes

Serve warm or at room temperature. Best enjoyed fresh.
