Ingredients
  

Egg Mixture

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup fresh spinach chopped
  • 1/4 cup bell peppers diced, optional
  • 1/4 cup cooked bacon or ham optional
  • 1 tsp fresh herbs parsley or chives

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a muffin tin or line with silicone cupcake liners.
  • Blend eggs and cottage cheese until smooth and frothy using a hand mixer or blender.
  • Add milk, salt, black pepper, and garlic powder to the egg mixture and blend briefly.
  • Fold in cheddar cheese, spinach, bell peppers, and cooked meat if using.
  • Pour mixture evenly into muffin tin cups, filling about 3/4 full.
  • Bake for 20–25 minutes until golden and set. Insert toothpick to check doneness.
  • Cool for 5 minutes before removing from muffin tin.
  • Serve warm with fresh herbs or store in airtight container.
