Ingredients
  

Salad

  • 2 boneless skinless chicken breasts
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup fresh basil leaves sliced

Lemon Dressing

  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 tbsp olive oil
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Cook chicken in a skillet over medium heat until golden and cooked through. Rest and slice.
  • Whisk lemon juice, zest, olive oil, garlic, salt, and pepper to make dressing.
  • Combine salad greens, tomatoes, cucumber, onion, and basil in a large bowl.
  • Add sliced chicken to the salad.
  • Drizzle with dressing and toss gently to combine.
  • Serve immediately with extra basil if desired.

Notes

Add Parmesan or avocado for extra flavor.
