Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 2 cups corn kernels
  • 2 cups cooked rice or quinoa
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 lime juiced and zested
  • salt and black pepper to taste

Instructions
 

  • Marinate shrimp with olive oil, garlic, spices, lime juice, salt, and pepper.
  • Preheat grill or grill pan over medium-high heat.
  • Grill shrimp 2–3 minutes per side until cooked through.
  • Grill corn until lightly charred.
  • Assemble bowls with rice, shrimp, and corn.
  • Garnish with herbs and serve.
