Ingredients
  

Soup Base

  • 8 cups chicken or vegetable broth
  • 1 tbsp olive oil or sesame oil
  • 1 onion sliced
  • 5 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey optional
  • 4 oz noodles rice or wheat
  • 1 cup carrots shredded
  • 1 cup mushrooms sliced

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Add onion and sauté until soft.
  • Add garlic and ginger, cook until fragrant.
  • Pour in broth, soy sauce, vinegar, and honey. Bring to boil.
  • Add carrots and mushrooms. Simmer 5 minutes.
  • Add noodles and cook until tender.
  • Taste and adjust seasoning.
  • Serve hot with garnishes.

Notes

Add chili oil for heat or spinach for extra greens.
