Ingredients
  

Cookie Batter

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 2 eggs large
  • 0.5 cup natural nut butter
  • 0.5 cup honey or maple syrup
  • 0.25 cup coconut oil melted
  • 1 tsp vanilla extract
  • 0.5 cup unsweetened applesauce

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, mix oats, flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, whisk eggs, nut butter, honey, oil, vanilla, and applesauce.
  • Combine wet and dry ingredients until just mixed.
  • Scoop dough onto baking sheet and flatten slightly.
  • Bake 10–14 minutes until set but soft.
  • Cool on rack before serving.

Notes

Do not overbake to maintain chewy texture.
