Ingredients
  

Salad

  • 4 fresh beets medium, scrubbed
  • 2 tbsp olive oil
  • 4 cups arugula
  • 0.5 cup feta cheese crumbled
  • 0.33 cup walnuts toasted

Vinaigrette

  • 3 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Roast wrapped beets with olive oil until tender, about 45 minutes.
  • Cool, peel, and slice the beets.
  • Whisk vinaigrette ingredients together.
  • Assemble salad with greens, beets, feta, and walnuts.
  • Drizzle with vinaigrette and serve.

Notes

Beets can be roasted in advance and stored refrigerated for up to 4 days.
