Ingredients
  

Salad

  • 2 cups raw carrots finely shredded
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 clove garlic minced
  • 0.25 tsp sea salt to taste
  • 1 tsp sesame seeds optional

Instructions
 

  • Peel and finely shred the raw carrots and place them in a mixing bowl.
  • In a small bowl, whisk together olive oil, apple cider vinegar, minced garlic, and sea salt.
  • Pour the dressing over the carrots and toss until evenly coated.
  • Sprinkle with sesame seeds if using and allow to rest for 5 minutes before serving.
